Does the refined gleam color have an impact when crafting marble or is it only the color of the refined rock?
It is only the color of the refined rock. You can put in any refined gleam you want.

Another follow-up question. If you have multiple colors of refined rock, how does it decide which color it is?

Some will say its the first color in the stack, some will say its whatever color most of the stack is, some will say once u craft it you can see the color it chose in the que window. I say these are all false and its completely random once the craft finished
