On creative and sovereign worlds you don’t appear to be able to change the color of bouder towers and similar type blocks. I could have sworn I was able to a week or two ago but could be wrong.
They will regen after being broken with the new colors.

The option to select a color is missing
They take the color of the rock ice glacier or soil they spawn on. In order for them to all magically be the correct color they would have to rebuild the world every time you changed a color and that won’t happen
