I want to start digging out a lake below my build but not sure how i would go about filling the lake

You can’t. But there are plans to do so.

filling the lake is easy, you just have to place blocks where the water is. If you want the water somewhere else (other than underneath) then you’ll have to wait for placeable water source blocks/buckets.
I want to fill a man made lake with water not fill a natural lake with blocks. I have rivers here could they help me at all
water currently travels 7 blocks and then stops so you have to have an incline to make water go more than 7 blocks
oh! gotcha, sorry. no, not really… you can have it flow from another source but it will not fill out a dug-out area.
Are there any tricks to create source blocks? Like in mine craft if two source blocks are diagonally apart and flow into the same block it would turn to a source as well
there are no source blocks yet
you can route water that already exists, but it has limits
they plan on source blocks in the future
I hope that’s not too far away as I would love to see some waterfalls on builds. With gleam in them, it would be stunning 
Also the ability to chisel glass would be great too.

Pretty sure I saw a post by a Dev recently indicating that they are quite close to having this in game and have worked out a way so it wont be used to grieve

They need to adjust the water a little so that it is more transparent when falling. I have built falls with gleam behind it and it is not quite the effect you might want. Like when you have glass against water it is not transparent.
I still want water blocks, but would like this also. .
