IIRC you cannot paint:

Grass
Foliage
Plants
Tangle
Thorns
Mud
Ash
Sponge
Mould
Growth
Silty Soil
Clay Soil
Peaty Soil

But we can get ash of whatever color by reclaiming something of that color right?

Not paintable but with all soil colors and grass colors available IDK if there’s any soil colors that are not obtainable via chiseling.
If you’re really asking yes all ash colors are pretty easy to get.

I was mostly just listing out blocks that can’t be painted. Granted no one will be going out farming ash.

I was farming for Grass I noticed black gleam pop up 90% of the time and I been on the planet all day lol

I noticed your grass farming. Bomb mining has been removed but bomb gathering seems to be a thing. 
And indeed. Over a couple of hours I spent there, I saw black gleam a few times, as well as shades of grey. In general gleam colours repeated more often than flowers that I was also collecting. In the end I had 54 colours of flowers and only 46 colours of gleam. Not much of a difference maybe but flowers didn’t repeat any specific colour as much as gleam.

They all change to the new palette yes.
Ye… Cause @Odeon said all blocks so i figured does that include every flower separately aswell 
Indeed everything changes to the new palette so all ghost flowers to one new color, all gladeflowers to one new color, etc. Not every single flower to a different new color all at once.
