I am looking for a list of all the things that are possible to spray. And also, at what stage is the best to spray the block. Does IT exist ?
Use the spray machine. That’s generally best. If you search forums for the original release notes there’s the list there of what can be sprayed

Wood, rock, brick, marble, storage, some machines, wood & rock signs, some doors…
Things you cannot spray: dirt, grass, tangle, foliage, thorns, boulders, metal blocks, metal/glass signs, glass, flowers.

Foliage trellis ? Wood trellis ?
Foliage trellis is explicitly excluded as it’s technically a foliage (unsprayable) block not a wood (sprayable) block like trellis.
IIRC this required a ‘fix’, there was a time when you could spray foliage trellis.

In the next update, I think they’re adding the ability to spray a lot more stuff
