I think it’s a voting technique. Everybody has a colored tab they put on creatures they like, then tally the votes.
Edit: scratch that theory, I notice some have multiple tabs of the same color.

Some have blue and red though.
Maybe biomess, or water earth air. …but some got 2 in same color, must be a heavy location.
