Horizontal and vertical behave differently
I could be wrong here, but this reminded me of the following post someone made over two years ago:

I think this one is a little different but I’m not 100% sure.
When chiselling you’re either mapping the top texture down or the side textures in.
It needs to be one of these.
And at the moment it’s down.

Makes sense. Thanks for this it explains why sometimes things look a touch different.
